How The Dawson Group is Redefining 30A’s Culinary Legacy
Some places become more than just restaurants; they transform into fixtures of a community’s soul. On 30A, where sugar-white sands meet the sparkling Gulf, names like Stinky’s Fish Camp, Red Fish Taco, and Stinky’s Bait Shack have become as iconic as the sunsets that paint the sky every evening. For decades, these eateries, led by local restaurateur Jim Richard and his Word of Mouth Restaurant Group, have embodied the spirit of South Walton. Now, a new chapter begins.
The Dawson Group, helmed by Clark and Ashley Beecher, has officially acquired these beloved institutions, stepping into some well-worn shoes and bringing their own creative energy to the table. Known for their Seaside staples like Dawson’s Yogurt, The Shrimp Shack, and Pickle’s, the Beechers are no strangers to preserving and elevating local traditions.
“While our current restaurants are located in the heart of Seaside, we are excited to expand our brand into the west end of 30A,” said Ashley.
The Beechers, alongside their operating partners Baron and Courtney Fields, are clear-eyed about the responsibility that comes with such a legacy. “We understand the importance of tradition and what each of these restaurants has brought to the community throughout the years,” said Courtney. “We want to continue Jim’s legacy while also incorporating and implementing some of the signature items, systems, and concepts our other restaurants have had great success with throughout the years.”
A Balancing Act of Tradition and Innovation
The Dawson Group is planning a careful evolution of these iconic restaurants, ensuring that the heart and soul of each location remains intact. For example, Stinky’s Bait Shack will continue to be a hub for live music and community events, including the signature Swamp Writer Music Festival and the Sand Up Comedy Festival, both benefiting local causes. But look out for expanded breakfast offerings and even a brand-new lunch and dinner concept by 2026.
Across the board, the goal is to blend the old with the new. Classic menu items, like the beignets and Oyster Log at Stinky’s Fish Camp, will remain, but expect a few surprises along the way.
Red Fish Taco, the west end’s go-to spot for fresh seafood and margaritas, is also getting a facelift. Tracery Interiors is leading a renovation to give the space a fresh, modern look while maintaining its inviting charm. And with the Beechers’ Texas roots, the team is bringing an authentic “TexMex flare” to the menu.
“Coming from Texas, we hope to fill the niche of TexMex cuisine along 30A,” Courtney said.
The acquisition isn’t just about expanding the Dawson Group’s portfolio—it’s about honoring the people and stories behind these establishments.
“Many of these owners are first-generation 30A locals that built and created these establishments when the area was still developing decades ago,” Ashley said. “Now, they are transitioning into a new chapter of life, and they take it very seriously when considering who they are going to sell and leave this legacy to. It is an honor that they trust The Dawson Group to carry the torch.”
The Beechers have experience doing just that. When they took over the Dawson Group in 2020 from founders Bill and Heavenly Dawson, they carefully preserved the character of the beloved Seaside businesses while adding their own signature touches.
Looking Ahead
This year is shaping up to be an exciting one for The Dawson Group and the 30A community. In January, Stinky’s Bait Shack will host the annual Swamp Writer Music Festival, a five-day celebration of local talent. February brings the Sand Up Comedy Festival and The Seaside School’s Annual Taste of Race, where one of the Dawson Group’s restaurants will take center stage.
For the Beechers and Fields, the journey isn’t just about running restaurants—it’s about creating experiences that bring people together. Whether it’s a TexMex-inspired taco at Red Fish, a plate of beignets at Stinky’s, or a live show under the stars at the Bait Shack, their vision is clear: celebrate the past, innovate for the future, and keep 30A as welcoming as ever.
