Spicy Beet Pasta

How pretty is this pasta? I mean just look at it. Maybe I’ve been watching too much Love is Blind, but I feel like if I was behind a wall describing this pasta to you, which is basically just beets and goat cheese, you probably wouldn’t propose and we wouldn’t take that trip to Mexico. But when the show finally aired and you saw how stunning these noodles were, you’d probably rue the day that you let this pasta get away.
Beets are also incredibly good for you and can help you live a long and healthy life. You really messed up by not proposing… Ok, moving on.
This pasta tastes very complex for being as simple as it is. The roasted beets add a nice earthy baseline, paired with some goat cheese and some cayenne for a little tang—Dang! This is a no cook sauce, so minus the time it takes to roast some beets in the oven, this dish basically makes itself and is a real showstopper.
Ingredients:
6-8 Beets
4 oz Goat Cheese
2 Garlic Cloves
1 Tablespoon of Honey
½ Teaspoon Cayenne Pepper
Juice of ¼ Lemon
½ Cup of Water
Several Dashes of Hot Sauce (Dealer’s Choice)
Fresh Thyme (A Couple Sprigs)
Salt to Taste
Pistachios (For Garnish)
How To:
In a preheated 400 degree oven, roast the beets until fork tender. Let them cool and then peel them. Using a spoon to scrape the skin off always works for me.
Add peeled beets and the ingredients listed above into a blender. Mix until smooth.
Boil some pasta (shout out to Nick from Love is Blind Season 7). I like linguine here but whatever you like will work.
Garnish with chopped pistachios and parmesan if you like. Then watch people’s jaws hit the floor as you serve it.
